The experience
Santiago Matatlán, in the hills of the Tlacolula valley, is known as the world capital of mezcal. Here you see the whole process: the agave growing in the fields, the roasting in underground ovens, the milling and the distillation passed down from generation to generation.
The highlight is meeting the maestros mezcaleros, whose craft gives every drop its character, and tasting different mezcales, from the smoky notes of espadín to the rare and complex tobalá. We also walk the village and its historic church.
